ALOO GOBI




ingredients:
potato 2
cauliflower florets 1 cup
peas 1 cup
onion 3
tomato 2
green chilli 2
ginger garlic paste 2 tsp
chilli pwdr 1 tsp
coriander pwdr 1tsp
garam masala pwdr 1/2 tsp
turmeric pwdr 1/2 tsp
oil,salt

method:
1.heat oil in  a pan fry onions and tomatoes to slightly golden colour & 
blend coarsely in blender.
2.heat oil in a pan add 1/2 cup of chopped onions, slited green chilli, ginger garlic paste & saute
3.add potato,peas,cauliflower and gently saute.
4.add enough water &cover with lid and cook the vegetables.
5.now add the blended mixture, add all the powders.
6. add enough water cover and cook.
7. garnish with coriander.
8.serve hot with chappathi.

chop the onions, use 3/4 for blending &1/4 for sautéing.
adjust the salt, masalas according to your taste.

MYSORE BONDA


Ingredients:

gramflour
potato
onion,greenchilly
mustard,cumin,urad dal
curry leaves,coriander leaves
chilli pwdr,turmeric pwdr,
coriander pwdr
cooking soda pwdr a pinch
salt,oil

Method:

1.In a bowl sieve gram flour and add water.
2.Add salt,chilli powder,cooking soda pwdr.
3.The batter should be thick.
4.To prepare potato masala, boil the potato's
5.Heat oil in a pan, splutter cumin,mustard,urad dal,curry leaves.
6.Add onions, green chilly and saute.
7.Add the boiled potato's and gently saute.
8.Add pinches of coriander,turmeric and chilli pwdrs& saute.
9.Make them into balls and keep aside.
10.Heat oil in kadai, dip the masala balls into batter and deep fry it.
11.Serve with ketchup or any chutney.


PARANGIKAI PULI KUZHAMBU



ingredients:

yellow pumpkin/parangikai(diced) 2 cups
onion 1, garlic 2 pods,tomato 1, green chilli 2
sambar,coriander,turmeric pwrds
tamarind(small lemon size)
fenugreek 1/2 tsp
mustard,cumin,urad dal,curry leaves.
oil,salt,coriander leaves

method:

1.heat oil in a pan
2.splutter mustard,cumin,urad dal,fenugreek ,curry leaves.
3.add garlic ,onion,green chilli and saute.
4.add tomato and saute well.
5.add the diced pumpkins and saute gently.
6.add salt& little water cover and cook for 5 min.
7.add sambar ,turmeric ,coriander pwdrs.
8.check the pumpkin is cooked.
9.pour the tamarind juice.
10.leave it for 3 min & garnish with coriander.

you can add 3tsp of jaggery water(optional)

VEGETABLE NOODLES


ingredients:

noodles 1 pkt
mixed vegetables(frozen/fresh)
onion 1
green chilli 2
ginger garlic paste 1 tsp
mustard,cumin,urad dal,curry leaves
pinch of chilli,coriander,garam masala pwdrs
oil,salt

method:

1.cook the noodles separately and rinse it in cold water & keep aside.
2.steam or microwave the veggies separately.
3.heat oil in a pan, splutter mustard,cumin,urad dal.
4.add curry leaves,onion,green chilli and saute gently.
5.add ginger garlic paste.
6.add the cooked veggies and noodles.
7.add all the pwdrs(only a pinch of it).
8.add salt & stir well.

VEGETABLE PASTA


















ingredients:

multi coloured pasta 200 gms
mixed frozen vegetables/fresh vegetables 2 cups
onion 1
green chilli 2
ginger garlic paste 1 tsp
cinnamon 1, cloves 3, cardamom 1
fennel,cumin 1/2 tsp
pinch of chilli powder,
coriander pwdr,garam masala pwdr
oil,salt required

method:

1.boil the water and cook the pasta separately.
2.steam the vegetables or microwave it for 7-10 min
3.heat oil in a pan, add the spices,onion, green chilli.
4.add ginger garlic paste & saute well.
5.add the veggies, pasta and stir well.
6.at last add all the powders and salt.
7. boil the egg and serve

very healthy and simple recipe. cook the pasta and keep it in cold water so that it doesn't stick together.just add pinch of all masalas.
I used peas,beans,sweetcorn,cauliflower,broccoli,carrot,brussels sprouts.

PLANTAIN PORIYAL/VAAZHAKAI PORIYAL


ingredients:

plantain 2
onion 2
dry red chilli 1
mustard,cumin,urad dal 1tsp
turmeric pwdr1/2 tsp
chilli pwdr 1/2 tsp
coriander pwdr 1/2 tsp
oil,salt

method:

1.peel the plantain, cut and boil it in hot water.
2.it cooks easily, so don't cook in pressure cooker.
3.heat oil in a pan, add mustard, cumin, urad dal to splutter.
4.break red dry chilli into 2 or 3 pieces, add curry leaves and onions.
5.saute the onions.
6.put the cooked plantain and saute for a while add all the powders.
7.add salt and garnish with coriander.

PEPPER PRAWN/IRAL MILAGU THOOVAL






ingredients:

prawn 500gms
onion 2
green chilli 2
ginger garlic paste 2 tsp
pinch of turmeric pwdr
pinch of chilli pwdr
pinch of coriander powder
pinch of garam masala powder
grounded coarse pepper pwdr 5 tsp
oil,salt

method:

1.heat oil in a pan.
2.add chopped onions, green chilli and then fry gently.
3.add ginger garlic paste and fry .
4.add the prawns,put all the powders and stir.
5.leave it in simmer and cover the pan with lid.
6.stir occasionally, add little oil if it sticks to the pan.
7.cook the prawn well until the oil separates.
8.add the grounded coarse black pepper & leave it for 2mts to coat well.
9.garnish with coriander.

I used frozen prawns, don't add water & let it cook by itself .
cover with lid and leave it in simmer.

MULTIGRAIN DOSA

multigrains dosa with egg korma


ingredients:

sprouted buckwheat 1 cup
rice 1 cup
urad dal 1 cup
chana dal 1 cup
toor dal 1 cup
whole green moongdal 1 cup
splited moongdal 1 cup
oats 1 cup
onion 1
dry red chilli 1 or 2
garlic cloves 3
ginger 1 inch
salt,oil

method:

1.soak all the grains and pulses together for 4 to 5 hours.
2.soak the oats separately for 5 minutes.
3.blend everything along with onion ,garlic,ginger,red chilli.
4.you can make dosa immediately with out fermenting it.
5.nice crispy dosa is ready.

note: you can add grated carrot,coriander to this and serve hot with any kormas,chutneys.
you can use any type of pulses,grains,cereals to make this.
it is very healthy and nutritional.

PEPPER CHICKEN


ingredients:

chicken 1kg
onion 2
ginger garlic paste 2 tsp
green chilli 2
cinnamon,cardamom,cloves
cumin,fennel
salt ,oil(required amt)
coarse black pepper 4 tsp

method:

1.Heat oil in pan, add all the spices ,greenchilli, onion.
2.Fry until golden brown then add ginger garlic paste
3.Add chicken ,salt as per your taste.
4.just cover the pan and leave it in simmer until the chicken get cooked.
5.check the chicken is well cooked.
6.Add coarse pepper at last then leave it for 2 or 3 minutes to coat well
7.Garnish with coriander.

simple and very easy recipe.
