ZUCCHINI / COURGETTE SAMBAR


ingredients:
zucchini/courgette 3
toor dal 3/4 cup
onion 1
garlic pods 4
tomato 1
green chilli 2
tamarind (small lemon size)
mustard, cumin, pepper corns ,urad dal for seasoning
sambar pwdr or red chilly pwdr 2tbs
coriander pwdr/dhania pwdr 2 tbs
turmeric 1 tsp
oil ,salt required



method:
1. cook toor dal in a pressure cooker with turmeric and salt.
2. peel and cut the zucchini/courgette & steam it or microwave it until well cooked.
3. heat oil in a pan season with mustard,cumin,pepper corns, urad dal & curry leaves.
4. then add onion,garlic pods & green chilli and fry gently.
5. then add chopped tomato and fry slightly.
6. then add cooked zucchini and toor dal & add water.
7. add all the pwdrs and salt.
8. soak tamarind & add its juice.
9. allow it to cook .
10. then garnish with coriander.
11. serve with rice, chappathi
